How To Make Pakora Kadhi
So my blog is still in its primary phase of hatching and I am thinking about pakora curry. This is an all time favourite vegetarian dish. For some unknown reason my mother never used to make this curry. My mother's friend once had a cook over to her house for making pakora curry, she had some sent for us to taste, and it was love at first spoon. My pakora curry memories date back to the time when my friend and I exchanged pakora curry as a token of our friendship.
There are different types of pakora curry but the basic ingredients are more or less the same. A yogurt and besan (chickpea flour) base is prepared first then pakoras are added followed by tampering. My pakora curry recipe is really a lip smacker and is sure to make you forget all your worries. This recipe goes very well with rice. Some people serve with nan or chapati. Don't be intimidated by the long list of ingredients as each one will play its role in imparting a unique character to this curry drama.

Here is what you will need:
For The Yogurt Base
2 cups besan (chickpea flour)
3 1/2 cup low fat yogurt
1 tsp red chili powder
1 1/2 tsp salt
1 tsp cumin
1 tsp ground corriander
3 liter water
For The Pakoras
2 medium onions
2 small potatoes
1 1/2 cups besan
1 tsp ajwain seeds(carom)
1 tsp pomegranate seeds
1tsp coriander seeds
1 1/4 cup water
For The Tampering
1 1/2 cup oil
4 sliced garlic cloves
1 onion chopped
1 tsp cumin
1 1/4 tsp turmeric
4 pcs cloves
4-5 whole pepper corns
1 1/2 tsp mustard seeds
1-2 green chillies
Method:
Step 1
Mix all ingredients needed for the yogurt base and let cook with 3 liter water.
Step 2
Let it boil on low heat for 2 1/2 hours. Keep stirring it from time to time.
Step 3
Mix all ingredient for the pakoras.
Step 4
Fry the pakoras
Step 5
Take the curry base of the heat and add pakoras.
For The Tampering
Take oil, add chopped onions fry when light brown add sliced garlic
Add the rest of the ingredient for the tampering and fry until ingredients are golden brown.
Now add the tempering to the already prepared curry.
That's it the pakora curry is ready to serve.
Sprinkle garam masala before serving.
