Mimosa Cake Recipe





This beautifully presented Italian cake is perfect for spring season Its resemblance to the mimosa flower compliments its name. In Italy mimosa flower is a symbol of Festa Della Donna (Women's Day).

There are other variants of mimosa cake, apart from the one I am posting today.  The cake itself is decorated with cubes of cake which give it a mimosa like appearance. First sponge cake is made. Filling is composed of egg custard and cream. You can make one sponge cake and cut it in 3 parts. One part will be used to cut cubes and the other two layers will be sandwiched together filled with custard cream.

So gather your ingredients and lets proceed:

Ingredients:

For The sponge
  1. 2 Whole Eggs
  2. 4 Yolks
  3. 110g Sugar
  4. 80g Flour
  5. 30g Cornflour
For The Custard Cream:
  1. 110ml Whole Milk
  2. 110g Cream
  3. 100g Sugar
  4. 4 Yolks
  5. 30g Flour
  6. 1 TS Vanilla Extract
For The Cream Filling:

1. 120g Double Cream
2. Sugar To Taste
3, 1 TS Vanilla

For Soaking The Sponge:

Milk or sugar syrup: As Needed:

Procedure For Cake:

Preheat oven 15 mins before baking.


Beat eggs with sugar . Beat for 15 min. Add yolks, beat for another 6 min




Step 2
Add sieved flour and cornflour. Fold from the base to top be gentle when folding.




Step 3
Put in a greased pan and bake at 180 degree for 30 min.




Step 4
The sponge is ready when a toothpick inserted into the cake comes out clean.







Procedure For The Custard Cream:

Step 1
Beat eggs with sugar. Separately warm milk and cream. Add to the egg and sugar mixture gradually while stirring so mixture doesn't form lumps. Cook till thick, add vanilla.




Step 2
Put some cling film on top let cool. The cling film must touch the surface of the custard.






For Double Cream Filling:

Beat double cream with sugar till light and fluffy.





Assembling The Cake:

Take the sponge either cut in three layers keeping one to make cubes and the other two for the filling.

Option 2 For Cubes
Make two sponges and cut one for filling and the other for making cubes.





Method:

Take the bottom layer and soak it with the liquid of your choice.




First spread whipped cream,





Spread with prepared custard and top with second layer of sponge.




Repeat the  process on the last layer spread whipped cream. Now start aligning the cubes commencing from the sides and ending at the centre.





Once all the cake is covered with cubes it will resemble a mimosa. Keep in fridge for a few minutes before serving. Hope you like the recipe!
