Bursting with flavour this dish has all the colours, I mean most of the colours of spring. It's vibrancy comes from the colours of bell peppers and tomatoes. Every household has its own recipe for jelfrezi
This recipe is not only easy but also quick to make. My jalfrezi only takes 30 mins to cook. So if you are short on time do try this recipe. The vegetables are stir fried the chicken is also stir- fried and then added to the separately prepared sauce. This dish is mostly served with boiled rice.
The best thing about jelfrezi is that it's very light on the stomach. You don't get a heavy feeling after eating it. So why not give it a try.

Here are the Ingredients:
- 300g boneless chicken
- 4 bell peppers green, red, yellow sliced
- 2 medium onions sliced
- 4-5 cherry tomatoes cut in half
- 2 tsp garlic chopped
- 1 tsp ginger chopped
- 1 green chilli chopped
- 1 tsp coriander seed powder
- 1tsp cumin seeds powder
- 11/2 tsp black pepper powder
- 1 1/2 tsp turmeric powder
- 1 1/2 tsp red chilli powder
- 4 tbsp oil
Method:
Stir fry the sliced onions and sliced bell peppers in 1tbsp oil Set aside.

Stir fry the chicken pieces in tbsp oil and set aside.

Take oil in a pan add chopped garlic, ginger and chopped green chilli. Saute 1 min. Add deseeded and chopped tomatoes. Cook for another minute.
Add spices |
Now add turmeric, red chilli powder, cumin and coriander seed powder.
Add stir fried bell pepper and onions. Cook for another 5 minutes and your jalfrezi is ready.

Additional Notes:
I like to keep jalfrezi fairly dry but if you like it with gravy add additional 3-4 tablespoon tomato puree.
When stir frying keep in mind that the vegetables retain their colour and crispness so only stir fry for 3-4 mins.
