Semifreddo means half frozen. Desserts that fall into this category are ice cream cakes, semi-frozen custards and some fruit tarts. This luscious dessert is soft and fluffy like an ice cream but comes with a bonus...it's sliceable and It's frozen like an ice cream but never becomes hard. Another factor which makes this dessert a winner is that you don't need an ice cream maker to prepare it. Just whip up the mixture put it in the freezer and you have the most delectable dessert you could ever imagine.

Ingredients:
5 yolks
2 egg whites
1 cup sugar
300g double cream
1/2 tsp cream of tartar
1/2 cup each of strawberry, blueberry and banana (pureed)
Method:
1) Prepare a 9-inch pan by lining it with cling film, keep the ends over hanging. Remove the wrinkles as much as you possibly can.
2 ) Beat yolks with 1/2 cup sugar over a double boiler. Beat till thick it will take about 6-7 mins. Set aside, let cool. Beat the double cream till soft peaks form, fold into the yolk mixture
3) Divide the mixture into three equal bowls.To each bowl add the three different purees that you have already made. So now you have three bowls with different fruits.
4) Beat the whites with remaining sugar and cream of tartar till stiff
5) Finally very carefully fold in the beaten whites, each bowl should receive an equal amount of egg white. Now first layer the strawberry mixture into the prepared pan. Cover with cling film and freeze for 1hr.
Take out and put a layer of blueberry mixture.
Repeat the same procedure after an hour with the banana mixture. Keep in the freezer for another 1-2 hours
Take out of the freezer when set, slice and serve as needed.
Additional Notes:
A double boiler consists of a bowl or small pan placed on top of a large pot or pan of simmering water. Keep the cling film as close to the mixture as possible to prevent the formation of crystals.
