Faloooda is a very popular summer dessert/drink admired by the people of Pakistan, Indian and Bangladesh alike. I think falooda can rightly be called a hybrid between a drink and a dessert. The fun part about a falooda is that you can eat and drink it at the same time. This drink/dessert is all about a sip of joy and a morsel of pleasure.

This is a dessert  well put together, with a heavenly combination of textures and flavours. You get the
softness from the noodles, chewiness from the seeds, melt in the mouth feeling from ice-cream and last but not the least the crunch factor from the nuts. Drizzle it with rose or Rooh Afza syrup for a royal feel.

I like to add a layer of fruit cocktail to my recipe for extra flavour. For the ice cream flavour, I would suggest kulfi but since I could not find kulfi and neither had the time to make one so I used  vanilla ice cream instead. Whenever I need to make something and have one or two ingredients missing, I always swap and substitute instead of ending up not making it at all.


Basic falooda requires cooking the milk till thick and then layering the ingredients. I like to use a shortcut and that is custard just one tablespoon of custard powder is enough to thicken the milk to the desired consistency. Falooda noodles are made with corn flour, I could not find any so I have used rice noodles instead. I think they are very close in taste with the falooda noodles.

Ingredients Quantity
milk                                                                1/2 lit
vanilla custard powder 1tbsp
sugar as required
strawberry jelly 1 packet
rice noodles 4 tbsps cooked
basil seeds  2 tbsp soaked in 1/2 cup water
vanilla ice-cream  as needed
rose syrup as needed

Preparing The Ingredients:

1) Prepare the rice noodles according to package directions. 

2) Prepare the custard by warming milk in a pot with sugar, add the custard and keep stirring.Remove from heat when thick. Let cool. Add 3 tbsp of rose syrup.

3) Prepare the jelly according to package directions, Let cool, cut into cubes.

4) Soak basil seeds in half cup water.

Assembling:


1) Take a tall glass or a serving bowl and add a few tbsps of soaked basil seeds.




2) Add one or two tablespoon of rice noodles. . I accidentally poured some custard first.




3) Pour about 4-5 tablespoons of custard, followed by the jelly.



Add a scoop or two of vanilla ice-cream and nuts if you like to give a final touch to this recipe. Have a sip and a spoonful and let the devine combination of flavours and textures play the piano on your taste buds.
