When it comes to baking, cakes are my favourite. I do bake cookies but seldomly. One of my best-loved cookies that I want to make again and again are peach cookies.
I think baking is really a work of art, just whip up some ingredients into a blob, pop into the oven and you have created a master piece. I like these cookies for two simple reasons, firstly they look very pretty just like real peaches and secondly they are super delicious.
The recipe is fairly easy to follow, you don't have to be a skilled baker to make them. See! Even I could make them and I am not artistic at all. Ask my children and they will tell you how much I struggle to make the food I have prepared to stand out on the table.
As far as the filling is concerned there are many options, you can use nutella, pastry cream or peach jam. I like to use peach jam just to stick to the theme. When applying colour there are different techniques but I have found that the colour is easier to apply with a pastry brush.
These look quite impressive just like Gulab Jamun, when served at tea parties or HighTea, you can even pack them as occasional sweet treats in your kids lunch boxes. So what are you waiting for, come with me into the kitchen and let's give it a shot.

eggs | 1 1/2 |
milk | 2tbsp +extra for painting |
baking powder | 1 tsp |
vanilla extract | 1 tsp |
salt | a pinch |
yellow food colour | 3-4 dps |
red food colour | 3-4 dps |
peach jam for filling | 10-12 tbsp |
granulated sugar for rolling | as needed |
basil or mint leaves for decorating | as needed |
Place flour, butter, sugar, eggs, salt, baking powder and vanilla into a mixing ball add milk gradually while mixing so that the mixture starts to attain a dough like consistency. Add a little more flour if the dough seems thin.
Leave to rest in the refrigerator for 10 minutes. Take out of the fridge and make small balls, about the size of a walnut.
Place 5cm apart from each other in a greased baking tray lined with a parchment paper. Bake in a preheated oven at 180 degrees C. Bake for 12 minutes the cookies should cook but not darken in colour.
Take out of the oven and let cool to room temperature. Once cool, turn the cookie upside down and scoop out with the help of a tea spoon. Reserve the crumbs for the filling. Set aside.

Prepare the filling by combining the reserved cookie crumbs with apricot jam.

Once ready place the filling into the hollow part of the cookie. Join two cookies together repeat the same process for each.
Now take milk in two seperate bowls mix yellow into one and red into the second bowl. Apply yellow colour with the pastry brush, followed by red.
Roll each into sugar, stick a clove in the middle with some mint or basil leaves.
