Eaton Mess is a traditional English dessert made with meringues, strawberries and fresh cream. I have been making this delicious dessert on and off for quite a while until recently when I thought of switching things up a bit and transmuting Eaton Mess Simple Dessert into Eaton Mess Cheesecake.

This heavenly combination of strawberries and meringues is really easy to assemble. The no bake base consists of a buttery layer of digestive biscuits and butter crowning a luscious filling of chopped strawberries, light as a cloud crushed meringuess along with a cream cheese filling. To make things even more tempting the crown of the cheesecake is topped off with gems of fresh strawberries and more crushed meringues. Mmm... what else do you want?

You can also use blue berries or raspberries incase you don't fancy strawberries. Infact it's nice to try out different flavours each time you make Eaton Mess Cheesecake. This cheese cake is really perfect as a make ahead dessert or next time take it to a high tea party and I'm sure you will be invited again.

Note: The cheesecake will get somewhat soggy when you add the fresh strawberries and meringues. Meaning that it will not set as firmly as a normal cheesecake would.

chopped fresh strawberries3/4 cup
crushed meringue nests 6 large
whole fresh strawberries 1/2 punnet

Method:

Crush the digestive biscuits add melted butter. Mix together and firmly press the mixture on the base of a spring form tin. You can also use a cling film to line the spring form.

Place the tin with the mixture in the refrigerator for at least an hour.

While the digestive biscuit base is resting in the fridge prepare the filling. Beat the philadelphia cheese with icing sugar. Add the cream and beat until the mixture is thick and fluffy.

Add the chopped strawberries.

 Add crushed meringues, fold everything into the whipped cream and philadelphia cheese mixture.

Place the mixture on the top of the biscuit base. Decorate with whole or chopped fresh strawberries and crushed meringues. Place the Eaton Mess Cheesecake in the fridge to set. Leave in the refrigerator either overnight or for a few hours.
